Tasty Vegan Grilled Salad with Tofu and Portobellos

A decent vegan grilled salad has been on my to-do list for a while now. I need a substantial amount of protein to help get me through the afternoon without hunger pangs. Tofu to the rescue there. Grilled portobello mushrooms always remind me of beef, so the flavour is rich to me even if the ingredient itself isn't. Rich is always good in a salad. A simple lemon vinaigrette adds the required tang. But suprisingly enough, the star of the show turned out to be the pumpkin seeds. The contrasting crunch really ties everything together and makes it feel like a meal. More

Vegan Tofu Sliders with Tangy Purple Coleslaw

The first time I tried these sliders, I was a little overwhelmed with a feeling of satisfaction, which doesn't happen often when I'm experimenting with a new recipe. I guess it's not all that surprising when you consider the ingredients -- pretty much anything tastes great when you put it on a fresh bun with a bed of tangy coleslaw. But the well spiced fried tofu in this recipe seems to get along particularly well with the coleslaw. The contrasts in flavour and texture make each bite a mini-adventure. Crispy Pan-Fried Tofu with Veggies

It's impossible to be vegan without planning. In fact, the intense planning requirements make it pretty easy to fall into a high-carb rut, just because our favourite carbs are easy -- pasta, rice, bread, potatoes -- these all take very little planning and they fill you up. For the sake of my long-term waistline health, I'm always interested in low-carb vegan meal ideas. When someone on one of the many excellent vegan Facebook groups suggested pan-frying slices of tofu in nutritional yeast and cornstarch, my ears perked up. Baked Tofu and Veggies in a Balsamic Marinade

When I was a young omnivore I used to take the train a lot, so much that I got addicted to business class. (It's way too easy to rationalize the extra ticket cost when you're looking at spending half a day sitting in an uncomfortable seat with a bunch of strangers -- at least this way you'd get a couple of glasses of wine and a hot meal.) Serving meals on mass transportation is a bit of a lost art, but like me you might be old enough to remember (and get nostalgic for) a time when it was routine everywhere. I was always amazed by the flavour they were able to pack into those little convection-heated, single-serving dishes, which when paired with a little wine, some fresh bread, coffee and dessert, left you feeling completely satisfied and well taken care of. Unless you were vegan. Vegans in those days got spaghetti in a watery tomato sauce or a salad with some fruit and pecans strewn on top. Vegan meals were definitely an afterthought, or so it seemed. I was thinking about this the other day, and I wondered if there was a way to make a single-pan meal with a vegan protein and all the veggies and herbs that the omnivores used to get on the train. Spicy Maple-Ginger Tofu with Veggies

This sweet-and-sour tofu dish has become one of my favourite vegan Chinese recipes. The sweet comes from (real) maple syrup, which can be obtained almost anywhere these days in large bottles. Rice vinegar provides the sour flavour, and if you like a little spice, a couple of Thai red hot peppers fit the bill nicely. But I have to say the star of the show here is the fresh ginger. It's the aroma that you notice first and the dominant flavour absorbed by the tofu. Serve it as part of a larger Chinese-style feast, or by itself on some steaming jasmine rice. More

Curl Up with a Vegan Quinoa Bowl Topped with Rich Tahini Sauce

The meal-in-a-bowl has become a mainstay of vegan restaurants. A successful bowl achieves a harmonious balance between a grain, a protein, vegetables and a flavourful sauce. Last week's tahini sauce adventure left me with a fierce desire to mingle all that lemon-sesame goodness with quinoa and cubes of firm tofu. So that's what I did this week. Easy Vegan Pad Thai

Pad Thai is a delicious noodle dish, but it's almost impossible to find a vegan version in the real world. Even if you can get it without the scrambled egg mixed in, it is usually full of fish sauce. Still, there is something magical about the combination of sweet, tangy, salty and spicy flavours that makes me want to try my own version. With tofu for protein, broccoli for colour and beansprouts for their unique earthy flavour, you've got a complete meal in one dish. I add the peanuts, sriracha sauce and lime after the noodles are on the plate so that everything stays fresh and vibrant. Sesame Ginger Noodles with Tofu

Cliches are sometimes cliches for good reason. The combination of sesame and ginger in Japanese cooking is so tried-and-true that its absence is more noticeable than its presence. Add some soy sauce, rice vinegar, some form of sweetener, and a little heat, and you've got a delicious cliche.
